Mixed Roasted Veggies

Ingredients

6 cups of your favorite veggies chopped or sliced, for example:

  • Onions
  • Garlic
  • Sweet potato
  • Beets
  • Cauliflower
  • Leeks
  • Carrots   (are shown here)

Extra-virgin olive oil


Salt and pepper dried herbs to taste

Directions

Preheat oven to 400°

In a large bowl or to toss all veggies generously and olive oil and then sprinkle with sea salt and freshly ground pepper. If you are using any other dried herbs you can add them at this time.


Spread veggies evenly over a large cookie sheet or jelly roll pan lined with parchment paper.


Flip veggies in 15 minutes and then continue to roast or bake until tender approximately another 15 to 20 minutes .
( Store in glass containers in the fridge and use throughout the week to add to tacos frittatas Buddha bowls etc.)
